Greek Inspired Salad
Looking for a healthy and delicious salad to make. Look no further! I love making Greek Salad, and my Fiance usually eats it by the bowl-load when I make it. Haha!
Seriously, you will not be disappointed with this salad!
Ingredients:
- 2 Big Cucumbers (Any brand or type is fine)
- 2 Cups of Cherry Tomatoes
- 1 Whole Red Onion
- ½ cup of Pitted Green Olives
- ½ cup of Black Olives (Pitted or Sliced)(Optional)
- 1 Whole Green or Red Bell Pepper
- 1-2 TSP of Fresh Oregano
- Black Pepper to taste
- Salt to taste
- ¼ cup of Red Wine Vinegar or to taste
- ⅓ cup of Olive Oil
- 1 Pack of Feta Cheese
( I don’t have the black olives pictured, but I did end up throwing them into the greek salad in the end)
Step 1: Peel and Slice Cucumbers
Step 2: Cut Cucumber into smaller uniform pieces and put it into a small bowl with a salt sprinkle mixed in. Adding salt will help take away some water out of the cucumbers and allow you to drain it. Let that sit for 10-15 minutes.
Step 3: Thinly Slice your red onions and put in the salad bowl you will use.
Step 4: Cut Green Pepper and Tomatoes into uniform pieces and put in the salad bowl with the red onions
Step 4: My cucumbers have been sitting for about 12 minutes, so I am going to go ahead and drain the excess water and put those in the salad bowl along with the other ingredients I already cut up
Step 5: Put the Black and Green Olives in the Salad Bowl as well
Step 6: Chop up the fresh Oregano and put it in the salad bowl.
Step 7: Add in Salt and Pepper to Taste ( Remember the Feta Cheese is salty so, be careful with the amount you are adding in
Step 8: Add in Red Wine Vinegar and mix it in Salad.
Step 9: Add Olive Oil in and mix in Salad
Step 10: Add in the Feta Cheese( crumbled or diced) and mix in Salad.
Step 11: Put it in your refrigerator for at least 30 min- 1 hour before eating (Best Cold)
Step 12: Dig In and Enjoy 🙂
